Dear Body Buds,
Happy Fourth of July! I hope you plan a few healthy meals that will be refreshing, as well as give you the energy and nutrients you need to have a wonderful day. Try this very simple Power Foods recipe and share with your loved ones. It's very easy to prepare and share!

Berry Cakes
Ingredients:
3 plain rice cakes
½ c. cottage cheese (2%)
3 large strawberries
¼ c. blueberries
Directions:
Wash and cut up the strawberries.
Top the rice cakes with the cottage cheese and fruit.
Make it a Power Foods Meal:
This is a PC meal that can be completed as a Power Foods meal by adding a serving of vegetables like cucumber or celery. Try experimenting with different fruits, trying to keep the total amount of fruit at or less than ½ c. to minimize the sugar in this meal. You might also swap plain Greek yogurt (2%) for the cottage cheese, though it will taste a bit tarter.
