Banana-naner Cookies Gone Wild!

Dear Body Buds,

Many of you know I served a mission for the Church of Jesus Christ of Latter-Day Saints (a.k.a. the Mormon Church) in Seoul, Korea! It was an amazing 18 months of my life that has done more to shape me as an individual and teach me than anything else I have done.

Well, last night was a mission reunion for all of the missionaries who served with my mission president and his wife. It was in my city, and I wanted to go, but I was SO tired and had SO much to do! And to make it worse, I had a responsibility to not just take cookies, but because it's ME, I had to take healthy cookies! haha!

And so, I took my Banana-naner recipe (coming soon in Volume II of recipes!) and had some fun with it. (Fun meaning haphazardly throwing things in and hoping it turned out okay!) I created these cookies in less than 30 minutes from start to finish, all while fixing my hair and makeup while they baked (ladies, you must master the art of getting ready WHILE your food cooks to make the most of your time!)

They turned out wonderfully and I went, had a wonderful time seeing so many old friends with whom I experienced so much. And my healthy cookies were one of the only thing on that table not laden with sugar :/

I share this recipe with you so that YOU may be the one to take something healthy to yor parties, reunions, and other events.

Let's start a new epidimic -- let'st throw away the B.S. of "I don't have time" and serve ourselves with "let's do what's best for our bodies," using a scoop of "motivating others" and a dash of "it's worth it."

Banana-naners Gone Wild

Ingedients:

4 medium very-ripe bananas

2 Tbsp. 100% natural peanut butter

1.5 c. rolled oats

1 Tbsp. cinnamon

1 c. oat flour

1 c. shredded coconut

1 c. semi-sweet mini chocolate chips (optional)

Directions:

1. In a medium-sized mixing bowl, mash the bananas.

2. Add the peanut butter and cinnamon and mix in with the bananas well.

3. Stir in the oats and coconut.

4. Add the flour in 1/3 c. intervals, making sure not to surpass the texture of normal cookies. They should be slightly sticky, but still thick enough to hold their shape well when molded.

5. Stir in the mini chocolate chips (may be skipped for a healthier cookie).

6. Take a 1/8 c. measuring tool and form cookies on a cookie sheet. Be sure to lightly grease the cookie sheet with an olive-oil based cooking sheet.

7. Bake at 350 degrees for 12 minutes.
