Girl's Night Out--a POWERFUL alternative!

Dear Body Buds,

On Labor Day, I was able to take a few hours for personal time (a rare occasion, but I do have a personal life too *smiles*) and spend time with my childhood best friend! She lives 45 minutes North of my home in Salt Lake City, so it's not an often occasion that we get to see each other. We planned for some "girl time" that would work with her husband and 4-year old's schedule.

Now, all of us girls out there tend to LOVE going out to eat with our friends, getting pedis, getting fro-yo, and shopping, right? Well that's good and all, and that's what Hilary and I were planning on doing--until we communicated that we would actually rather do our own Power Foods night at home! We both love Thai food (love to frequent Sawadee's--a downtown Thai restaurant that's amazing!) so we divvied up the ingredients to bring, chose to do our own nails, and watched a movie at home. Not only were we able to save a LOT of money, but we were able to control the food that went into our bodies! I was really happy to hear about Hil's first half marathon she recently completed too! I am proud of her! We had a wonderful time catching up and made an AMAZINGLY DELICIOUS Power Foods Stir-Fry! I'd like to share with you how we made it and how simple it was! :)

Thai Turkey & Veggie Stir-fry

Ingredients:

1/2 c. diced onion

1 Tbsp. soy sauce

1/2 Tbsp. Olive Oil

1 lb. lean ground turkey

2 c. chopped broccoli

2 c. chopped cauliflower

2 stalks chopped celery

2 c. halved baby carrots

1 tsp. Chili powder

1 tsp. Curry powder

1/2 tsp. Cumin

2 tsp. Garlic Salt

1/2 tsp. Chinese Five Spice

2 c. brown rice

Directions:

1. Add the rice to a rice cooker and begin cooking 45 minutes before you desire to eat.

2. Wash the vegetables and chop them up into bite-size pieces, or the onion into even smaller diced sections.

3. Add the oil and soy sauce to a wok or a large stir-fry pan. Turn the heat to medium.

4. Add the vegetables and saute for 5 or so minutes.

5. Add the lean ground turkey breast. We used 93% lean because that is all the store had. (Don't stress terribly much about the fat--just get as lean as you can.) Continue to cook the meat and veggies on medium heat until the meat is cooked throughly.

6. While tossing around the meat and veggies, sprinkle the seasonings throughout the mixture.

7. Once the meat and veggies are throughlyl cooked, remove the pan from the heat.

8. Serve 1/4 of the meat and veggie mixture over 1/2 c. cooked brown rice. Be sure to eat slowly and enjoy each bite! Easy peasy! You have a PVC Meal.

I challenge you to make your next Girl's Night a Power Foods night! :) Take control of your body and save some moolah while you're at it! :)
