All these Veggies for less than $15!

Dear Body Buds,
Eating vegetables six times a day as the Power Foods Lifestyle suggests can become quite expensive, can’t it? Although we can have every intention of eating healthily, the logistics of doing so can make it difficult—especially on a budget.
You may want to review my video that has tips for following the Power Foods Lifestyle on a budget, and begin applying some of the strategies below for incorporating veggies into your daily nutrition.
I was able to purchase all of these vegetables for less than $15! I bought them all in one place, and paid attention to which items were on sale or not. Here’s what I bought, and how I plan to use them this week:

1 bag baby Carrots: During your food prep, throw these lovelies into a steamer, and let them steam until soft. Sprinkle with McCormick seasoned salt, then divide into Ziploc bags or small Tupperware. These make for very easy grab-and-go veggies when heading out the door, or can be added to a meal at home. Since they’re already cooked, that saves you time!
1 bunch Collard Greens: Wash, then chop into small pieces. Store in a Tupperware to add to egg white scrambles each morning. They pick up such a nice flavor with the egg whites, especially in conjunction with garlic salt, basil, and a little paprika.
1 bunch Red Leaf Lettuce: Chop these up and store in a bowl with saran wrap to make a quick salad as the week goes on. Sometimes I find that my leafy greens last longer when I store each serving individually in a large Ziploc bag and keep in the crisper of the fridge.
1 bunch Radishes: Chop these into small bite-size chunks to add to salads or stir-frys. Last week I ate one radish after my workout with my protein shake and loved the refreshing, and spicy flavor!
3 medium Zucchini: Cut into long strips like carrot sticks then stored in Ziploc bags. I love to eat mine raw! You also might try steaming them with your carrots and storing in that way.
3 Bell Peppers: Wash, then chop into bite size chunks or strips to be used in egg white scrambles, eaten raw with a protein shake or protein bar, or added to a salad. Store in a Tupperware in the fridge. As the green peppers are usually less expensive than the orange, red, and yellow peppers, opt for green. Yes, they are more bitter than the others, but have amazing nutrients!
1 carton Strawberries: Wash each strawberry, cut off the top, then store in a bowl to add 3-4 each morning to my Fit-4-Her shake. I also like these in cottage cheese, so alternating the use of them creates variety during the week.
3 Oranges: Cut in half, and store in Ziploc baggies in the fridge. These are great for adding to a protein shake (blend in), eating with some cottage cheese, or eating intra-workout for some extra energy.
One of the best things for your health is getting a serving of vegetables at every meal you ever eat. The constant attention to these nutrient-filled foods will fuel your body, giving it the chance to absorb and utilize the vitamins and minerals that are imperative to your body’s normal functioning. While it can seem easy to put off eating vegetables, saying they’re too expensive or don’t taste all that great, the consequence of not doing so can be far-reaching on your wallet, health insurance premiums, and quality of life.
Hippocrates said it best, and I can’t wait to shake his hand and say, “you’re the man.”
