Kodiak Cakes: World's Best Flapjacks

Dear Body Buds,
A few months ago, a client asked if she could have Kodiak Cakes as the Carb serving of one of her PVC meals. After checking out the macronutrient levels and ingredient list, I gave her the correct portion size for her body and goals and said 'yes.' So when a box of Kodiak Cakes mix caught my eye the other day at the grocery store, I thought I would give them a try as well.

Game over--they are absolutely amazing! Made from 100% whole grain wheat flour and whole grain oat flour, this mix has a very granular, wholesome, flapjack taste. As a child and teenager, my parents would often grind wheat to make whole grain pancakes and waffles, a taste that has drawn me for years, so this taste sent me over the moon! And all you have to do is add water!
To make one serving size, I used 1/3 c. of the mix + water batter, which made two 4" pancakes (yes, I put more than that in the photos because they're just so pretty!) Let's take a look at the macronutrient levels:
Protein: 7 grams
Carbohydrates: 27 grams
Fats: 1 gram
Calories: 130
As the Carbohydrates are the only number to fit in a "peak range" as I describe in The Power Foods Lifestyle, and the ingredients are simple, wholesome, and from the earth, we can classify Kodiak Cakes as a Power Carbohydrate!
Below are two versions of Power Foods meals I created using Kodiak Cakes mix:
1. Regular Kodiak Cakes pancakes with 1/2 c. cottage cheese (2%), 1/3 c. raspberries, and 1/2 cucumber on the side (not in photo).

2. Pumpkin Pie Kodiak Cakes: I added 4 egg whites, 1 scoop protein powder, 1/2 c. pumpkin puree, and 1/2 Tbsp. cinnamon to 1.5 c. Kodiak Cakes mix. I then added enough water to bring it to pancake batter consistency and made my Pumpkin Pie Kodiak Cakes! Again, two 4" pancakes was one serving size, but accounted for both protein and carbs--all I did then was add 2 stalks celery on the side to complete the PVC meal (not in photo).

Give them a try, and see if you don't fall in love with the world's best flapjack mix--Kodiak Cakes!
